Easy recipe for Shrimp Cocktail with Dragon Fruit. Elevate this much loved retro holiday appetizer with a unique, healthy and tropical twist of textures and flavours.
First make the wasabi mayonnaise - see recipe below.
Cut up all the ingredients into small pieces and add to a big bowl. Stir in the wasabi mayonnaise and lime juice. Add a few drops of tabasco (or more wasabi) according to your taste then stir in the chopped fresh coriander and mint.

To Serve: Chill until ready and serve in individual glasses or directly in the dragon fruit.To Prepare: This can be prepared the day before and chilled covered in the fridge until needed. However, this is not recommended to freeze.Dragon Fruit: Either red or yellow are great.
