Easy Shrimp Cocktail with Avocado and Tropical Fruit

Easy shrimp cocktail recipe using pre-cooked prawns, avocado, apple and a light wasabi mayonnaise. A fresh, make-ahead prawn cocktail with an optional festive dragon fruit twist.
Cut up all the ingredients into small pieces and add to a big bowl. Stir in the wasabi mayonnaise and lime juice. Add a few drops of tabasco (or more wasabi) according to your taste then stir in the chopped fresh coriander and mint.

To Serve: Chill until ready. Serve in cocktail glasses, or spoon into halved dragon fruit shells for a festive look. Add a lime wedge or extra shrimp on top.Make Ahead: Prep up to 1 day ahead and keep covered in the fridge. Stir once before serving. Do not freeze.Dragon Fruit: Optional (and can be pricey). In France it’s easiest to find around the holidays. If you don’t have it, use kiwi or pink grapefruit — or simply add extra apple and avocado.Herbs: Coriander/cilantro adds lots of flavour.
