A quick French raspberry coulis made with fresh or frozen raspberries, lemon juice and very little sugar. Smooth, naturally tart and ready in under 15 minutes for desserts, breakfast dishes and more.
Place the frozen raspberries, lemon juice and sugar (or honey) in a small saucepan. Cook gently over medium heat for about 5 minutes until the fruit softens and releases its juices. Using fresh raspberries? No need to cook: simply mash the raspberries with the lemon juice and sugar (or honey).
Blend until smooth using a blender or stick blender.
Press through a fine sieve into a bowl, using the back of a spoon to remove the seeds (optional)
Notes
Serve immediately or chill until needed.Serving ideas: Delicious with Peach Melba, crêpes, French toast and semolina cake.Storage: Keep refrigerated in a sealed container for up to 5 days or freeze for up to 3 months.Variation: Use strawberries, cherries or mixed berries instead of raspberries.
